Flat Apple Pie

I borrowed this recipe from the Pioneer Woman Cooks after I saw it on her Food Network show.  It is super easy and so YUMMY!   You'll love it.   I did take one short-cut.  Obviously, she handmade her pie crust, I used store bought.  It worked for me, although hers was probably much better.  :)



FLAT APPLE PIE
Ingredients
  • 5 Granny Smith apples, peeled and sliced
  • 1/2 cup firmly packed brown sugar
  • 1/2 cup granulated sugar
  • 2 tablespoons all-purpose flour
  • 1/4 teaspoon salt
  • Juice of 1/2 lemon
  • Pie Crust 
  • 6 tablespoons butter

Caramel-Nut Popcorn #Recipe

This delicious popcorn is a perfect blend of sweet and salted.  It's a great treat for a Friday night while watching a movie or it even makes a terrific gift; to neighbors at Christmas, a friend recuperating from an illness, or a last minute birthday gift to the person who has everything!  So easy to make and it's something the whole family can help with.

Peanut Butter Truffles



We had sort of a snow day yesterday.  It began snowing snowing Saturday night and didn't stop until the following morning when we woke to a Winter Wonderland.  Both my mom and stepson and daughter-in-law's homes lost power for a while during the storm.  I had planned on having my granddaughter, 8 year-old niece, mom, daughter and D-I-L over to make gingerbread cookie pops but the foul weather prevented our gingypop day.  So instead I made Peanut Butter Truffles.

2 cups sugar,  1 5oz. can evaporated milk,  1/2 cup butter,  2 cups mini marshmallows,  3/4 cup creamy peanut butter,  1/2 tsp vanilla,  12 oz. dark chocolate,  2 tsp shortening,  finely chopped peanuts

Butter the sides of medium heavy saucepan.

In the saucepan, combine the sugar, evaporated milk, and butter. 

Cook and stir over medium high heat until mixture is boiling. 

Reduce heat to medium; continue boiling at a moderate, steady rate for 12 minutes, stirring occasionally.

Remove saucepan from heat.  Stir in marshmallows,

peanut butter, and vanilla


Transfer mixture to a large bowl.


Chill for 45 to 1 hour or until mixture is thick and can be molded.

Line a large baking sheet with waxed paper or parchment paper.  Shape mixture int 1-inch balls; place balls on the prepared baking sheet.  Freeze balls for 15 minutes.

In a medium saucepan, combine the chocolate and shortening. 

Cook and stir over low heat until melted. 


Dip balls, one at a time, into melted chocolate.

Let excess chocolate drip off balls.

Place on a wire rack set over wax paper. 

If desired, sprinkle truffles with peanuts or drizzle with milk or white chocolate.

Let stand until chocolate is set.





Peanut butter truffles for gift giving or a yummy treat!

Will keep in an air-tight container in the refrigerator up to two weeks.

Mother Goose Popcorn

This is a childhood favorite, introduced to me by my grandmother.  She made this popcorn every Christmas.  Soon we made it throughout the year, changing the color and flavors for different holidays.  I changed it up by drizzling chocolate (milk and white) over the top.  It tasted great!


RECIPE

1 cup sugar
2 Tbsp water
2 Tbsp butter
dash salt
1 1/2 tsp desired flavoring
Food coloring
Popcorn


Ingredients

Mix sugar, water, butter & salt.

Bring ingredients to a boil.

When it reaches the soft ball stage, remove from heat.

Add flavoring and a few drops of desired food coloring.


Pour over popcorn and stir until it becomes sugary and cold.


Drizzle with chocolate (if desired).


Voilà!  Yummy popcorn, great for gift-giving!

Uber-Doober Peanut Butter Brownies


Uber-Doober Peanut Butter Brownies 
(recipe from the Better Homes & Garden Cookie Magazine)

INGREDIENTS:

4 oz. bittersweet chocolate, coarsely chopped
1/4 cup butter
1/4 cup peanut butter
1 cup packed brown sugar
2 eggs
1 tsp. vanilla
2/3 cup flour
1/4 tsp. baking soda
1/8 tsp. salt
1 cup chocolate-covered peanut butter cups, chopped
   Nutty frosting


Ingredients

 
Combine chocolate, butter and peanut butter.  



Cook and stir over low heat until melted.  


Cool.  Preheat oven to 350 degrees.  Line an 8x8x2" baking pan with foil, wrapping foil over the edges.  Grease foil; set pan aside.



Stir brown sugar into cooled chocolate mixture.



Add one egg at a time, beating with a wooden spoon after each addition. 


Stir in vanilla.  

In small bowl, mix flour, baking soda and salt.  Add flour mixture to chocolate; stir just until combined.

Stir in one cup chopped peanut butter cups.  


Spread batter evenly in the prepared baking pan. 


 Bake in the preheated oven about 30 minutes or until set.  Cool in pan on wire rack.


Spread Nutty Frosting over brownies.  Makes 24 brownies.  Store in an airtight container in the refrigerator up to three days or in the freezer for three months.


NUTTY FROSTING
In a medium bowl, combine 1/2 cup peanut butter, 1/2 cup softened butter, 1 tablespoon milk, and 1 teaspoon vanilla.  Beat with an electric mixer on medium speed until combined.  Gradually beat in 2 cups powdered sugar.

Black Bean -n- Pumpkin Chili



I found this recipe in my latest Taste of Home magazine. The original recipe is listed on their web site, you can find it here:  Taste of Home Black Bean-n-Pumpkin Chili recipe

I changed it up a little.  This is my "veggie" version.

Ingredients:
  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 1 medium sweet yellow pepper, chopped
  • 3 garlic cloves, minced
  • 3 cups veggie broth
  • 2 cans (15 ounces each) black beans, rinsed and drained
  •  vegetarian chicken
  • 1 can (15 ounces) solid-pack pumpkin
  • 1 can (14-1/2 ounces) diced tomatoes with chiles, undrained
  • 2 teaspoons dried parsley flakes
  • 2 teaspoons chili powder
  • 1-1/2 teaspoons dried oregano
  • 1-1/2 teaspoons ground cumin
  • 1/2 teaspoon salt 
  • 1 can corn, drained
  • 2 jalapeno peppers seeded and chopped, optional

 Directions:




In a large skillet, saute the onion, yellow pepper in oil until tender. Add garlic; cook 1 minute longer.



Transfer to a 5-quart slow cooker; stir in the remaining ingredients. Cover and cook on low for 4-5 hours or until heated through.




Enjoy! Excellent chili, very healthy and you don't taste the pumpkin in it at all.  A new favorite at our house!
