Tasty Tuesday--Greek Olive Potato Salad



One of my favorite summer salads is potato.  And there are so many varieties of this summertime favorite.  Some I have tried--not worth retrying, but this one is rather tasty.  There are 200 calories per serving for this yummy salad and a serving is 3/4 cup.  So this is not as healthy as eating a dish of veggies, but not too bad when planning a fun BBQ.

Tasty Tuesday--Spring Pea Pod & Asparagus Pasta

My husband and I have been trying to make changes to our diet.  We have cut out bread, which means no more sandwiches for lunch.  We have also cut out most dairy products--not all but most.  So we have been eating a lot of salads.  Apparently I happen to like salads more than my husband.  I could eat them every day, but eating the same old veggie salad day in and day out bores him.

Summer salads

For one of our recent holiday get togethers with our children, I needed a salad or two.  I wanted something different, something other than the standard potato or macaroni salad I would normally do.  So, I turned to my recipe book and scanned for a tasty salad that also looked simple to make.  I don't remember who recommended either of these recipes, but thanks!  My family loved them, especially the fruit salad (and it was so simple!)
