I discovered this recipe on Pinterest and just had to try.
It is from the Six Sisters Stuff web site, a great resource, full of wonderful recipes and craft ideas. This is a quick and easy recipe and so YUMMY! Everyone loved it. Although, I made one addition--I added chopped pecans to the brown sugar topping.
Ingredients:
1 (15 ounce) can pureed pumpkin
2 eggs
1 tablespoon vanilla
2 teaspoons pumpkin pie spice
1 (18 ounce) box yellow cake mix
1 teaspoon baking soda
½ cup brown sugar
½ cup all purpose flour
4 tablespoons butter, melted
¼ cup chopped pecans

Directions:
- Preheat oven to 350 degrees.
- In a large bowl, mix water, pumpkin, eggs, vanilla, and pumpkin pie spice.
- Mix in dry cake mix and baking soda and mix until combined.
- Pour batter into a greased 9x13 baking pan.
- In a small bowl, mix together brown sugar, flour, melted butter and chopped pecans. Sprinkle over the top of the cake.
- Bake for 25-30 minutes or until an inserted toothpick comes out clean. Cool and serve.
Yummy! I have made this recipe, and it is great. Pecans are my favorite nut. They would be the perfect addition. I will remember to add them next time.
