Cherry Chocolate Brownie Cupcakes






I threw together some cupcakes Saturday morning for a party I having that afternoon and they turned out pretty good and so easy I thought I would share.



I started by washing and drying some cherries.


Next, I melted some chocolate.  You can use your favorite.  I used a mixture of a plain Hershey chocolate bar and a Symphony chocolate bar.


I dipped each cherry and laid it on parchment paper to dry.  After the chocolate had hardened.  I dipped each one a second time, just to make sure they had a nice thick coating of chocolate.


I made my cupcakes with a box of brownie mix.  It doesn't matter what brand, you can use your favorite.  I just followed the directions on the back of the box, except that I increased the eggs to three to make the batter more cake-like.  Then I separated the mix into cupcake liners and baked them for about 25 minutes.  Just check and make sure they are done before removing them from the oven.



While they were cooling, I mixed up a batch of cream cheese frosting.



CREAM CHEESE FROSTING:
  • 3 oz. cream cheese
  • 1 cube margarine
  • 1 tsp. vanilla
  • 2 cup powdered sugar
Combine all ingredients and mix well.

After the cupcakes had completely cooled, I used a decorator bag and my large closed star pastry tip and squeezed out a dallop of frosting.  Added a few sprinkles and popped a chocolate covered cherry on top.  VoilĂ !  Easy and quick.
