Summer salads

For one of our recent holiday get togethers with our children, I needed a salad or two.  I wanted something different, something other than the standard potato or macaroni salad I would normally do.  So, I turned to my recipe book and scanned for a tasty salad that also looked simple to make.  I don't remember who recommended either of these recipes, but thanks!  My family loved them, especially the fruit salad (and it was so simple!) 




FRUIT COOL WHIP SALAD
1 large can of fruit cocktail--drained
1 large can mandarin oranges--drained
1 large can crushed pineapple--drained
1 16oz. Cool Whip
1 3oz. pkg. of instant sugar free Banana Cream pudding


Sprinkle half of pudding on fruit and mix together.  Mix cool whip with fruit and rest of pudding.  Fold together.














CREAMY TORTELLINI SPRING SALAD




1 envelope GOOD SEASONS Italian dressing mix
1/2 cup Kraft Real Mayo mayonnaise
1/4 cup white wine vinegar
3 Tbsp. water
2 pkg. (9oz. ea) refrig. cheese tortelli, cooked, drained (2 1/2 cups)
2 cups sugar snap peas, halved
1 cup shredded carrots



COMBINE dressing mix, mayo, vinegar and water in large bowl. 
ADD remaining ingredients; toss to coat. Cover.






REFRIGERATE several hours or until chilled.

  1. I made the Fruit Cool Whip Salad, and it was very popular: no leftovers !! The only thing I changed was the pudding, since nobody at home (my husband and some friends)are not too fond of banana flavored things I used the vanilla pudding instead. Very refreshing for summer great with a BBQ !! :)
